Here's a recipe submitted by our customer Mary Getz from Cedar Rapids, Iowa.
Green Tomato Pie Ingredients:
1 ¼ cup sugar
2 tablespoons Minute tapioca
1 teaspoon grated orange rind or (orange zest)
½ teaspoon cinnamon
dash to ¼ teaspoon nutmeg
¼ cup raisins (may use golden)
5 thinly sliced green tomatoes (enough to fill crust)
2 pie crusts
Preheat oven to 425 degrees. Mix first 6 ingredients in a bowl. Lay tomato slices in bottom of pie crust. Cover tomato slices with mixture. (Don't worry if you don't cover slices evenly - tomatoes shrink during baking). Top with other pie crust and crimp together. Make slits in top crust with knife. Brush top crust with egg white and sprinkle lightly with sugar. Bake 25 minutes at 425° then reduce heat to 350° for another 20 minutes.
