Known as 'Vegetable Oyster' this root tastes remarkably like oysters. Creamy white roots are 8 to 9 inches long and 1 to 1-1/2 inches across at the shoulder. Excellent when peeled, sliced and boiled or fried, and served in sauces or soups. Requires a long season, but can either be dug and stored in the fall or left in the ground all winter and harvested as needed. Easy to grow, salsify does best in loose, sandy soil. Very delicious and highly nutritious.

    I absolutely love this root crop! I akin the flavor to artichoke hearts and have used as successful substitutes in several recipes. Not much luck overwintering in the garden, but they keep exceptionally well in the root cellar/fridge. A much under appreciated vegetable.
