Lima beans (Phaseolus lunatus) are primarily used as fresh shell beans. Their relatively long growing season needs has historically restricted them to more southern locations, but northern gardeners are increasingly learning to grow and enjoy them. Available in both bush and pole habits, and in small-seeded and large-seeded varieties, Lima beans are relished as a fresh shell or dry bean in a wide range of recipes.
